Ingredients

Proteins:

  • 6 Italian-style sausages (chicken or pork)

Vegetables:

  • 4 medium potatoes, cubed
  • 2 peppers (any colour), chunked
  • 1 red onion, wedged
  • 200g Brussels sprouts, halved
  • 4 cloves garlic, smashed

Seasoning:

  • 3 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper

Instructions

  1. Prep the pan: Preheat oven to 200°C. Line a large sheet pan with parchment paper.

  2. Season vegetables: Toss potatoes, peppers, onion, Brussels sprouts, and garlic with olive oil, Italian seasoning, paprika, salt, and pepper.

  3. Arrange on pan: Spread vegetables in a single layer. Nestle sausages on top.

  4. Roast: Bake for 30-35 minutes, turning sausages halfway through, until sausages are cooked and vegetables are golden and tender.

  5. Serve: Serve directly from the pan or transfer to plates.

  • Don't overcrowd: Use two pans if needed for proper browning.
