The miso glaze creates an incredible caramelised crust while keeping the salmon incredibly moist inside. It's a perfect balance of sweet, salty, and savoury.

Ingredients

Miso Glaze

  • 3 tablespoons white miso paste
  • 2 tablespoons mirin (or honey)
  • 1 tablespoon soy sauce
  • 1 tablespoon sake (or rice vinegar)
  • 1 teaspoon sesame oil

Salmon

  • 2 salmon fillets (150g each)
  • 1 tablespoon vegetable oil
  • Sesame seeds for garnish
  • Spring onions for garnish

Instructions

  1. Make glaze: Whisk all glaze ingredients together until smooth.

  2. Marinate (optional): For deeper flavour, coat salmon with half the glaze and refrigerate 30 minutes to 2 hours.

  3. Preheat oven: Set to 200°C (400°F).

  4. Sear salmon: Heat oil in oven-safe pan over high heat. Sear salmon flesh-side down for 2 minutes.

  5. Glaze and bake: Flip salmon skin-side down. Brush generously with miso glaze. Transfer to oven and bake 8-10 minutes.

  6. Finish: If desired, broil for 1-2 minutes to caramelise glaze further. Watch carefully to prevent burning.

  7. Serve: Garnish with sesame seeds and sliced spring onions.

Tips for success

  • Watch the broiler: Miso can burn quickly due to sugar content.
  • Don't over-marinate: More than 2 hours can make texture mushy.

Variations

  • Air fryer: Air fry at 200°C for 8-10 minutes.
  • Grill: Grill over medium-high heat, 4 minutes per side.

Storage

Refrigerate up to 2 days. Best eaten fresh.
