Why you'll love this recipe

Satisfy ice cream cravings with this high-protein alternative. Kids love it too, and you can feel good about serving it.

Ingredients

  • 500g Greek yogurt (full-fat or 0%)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Mixed berries
  • Granola
  • Dark chocolate chips
  • Sliced almonds
  • Shredded coconut

Instructions

  1. Mix yogurt: Stir together Greek yogurt, honey, and vanilla until smooth.

  2. Spread on tray: Line a baking sheet with parchment paper. Spread yogurt into a thin, even layer about 1cm thick.

  3. Add toppings: Scatter berries, granola, chocolate chips, nuts, and coconut over the yogurt.

  4. Freeze: Freeze for at least 3 hours or overnight until solid.

  5. Break into pieces: Remove from freezer and break into irregular bark pieces.

  6. Serve immediately: Best eaten straight from freezer.

Tips for success

  • Even thickness: Ensures consistent freezing and breaking.
  • Work quickly: Bark melts fast once out of freezer.

Variations

  • Tropical: Mango, pineapple, coconut, macadamia nuts.
  • PB&J: Swirl peanut butter, top with raspberries.
  • Chocolate: Mix cocoa powder into yogurt.

Storage

Store in freezer in airtight container for up to 2 months.
