Why you'll love this recipe

These protein energy bites are the perfect healthy snack. They taste like cookie dough, pack 5 grams of protein each, and keep in the fridge for weeks. Make a batch on Sunday and you'll have snacks sorted.

Ingredients

Base:

  • 150g rolled oats
  • 2 scoops vanilla protein powder
  • 160g peanut butter (or any nut butter)
  • 80ml honey
  • 2 tablespoons coconut oil, melted

Mix-ins:

  • 60g dark chocolate chips
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mix dry ingredients: Combine oats, protein powder, and salt in a large bowl.

  2. Add wet ingredients: Mix in peanut butter, honey, melted coconut oil, and vanilla extract until well combined.

  3. Add mix-ins: Fold in chocolate chips and chia seeds.

  4. Chill: Refrigerate mixture for 15-20 minutes to make rolling easier.

  5. Roll: Using wet hands, roll mixture into golf-ball sized balls. You should get about 20.

  6. Store: Place on a lined tray and refrigerate until firm, about 1 hour.

Tips for success

  • Adjust consistency: If too dry, add more honey. If too wet, add more oats.
  • Wet hands: Keeps mixture from sticking while rolling.
  • Chill first: Cold mixture is much easier to handle.

Variations

Chocolate peanut butter:

  • Use chocolate protein powder
  • Add extra cocoa powder
  • Roll in crushed peanuts

Tropical:

  • Add shredded coconut
  • Use macadamia butter
  • Mix in dried mango bits

Oatmeal cookie:

  • Add cinnamon and raisins
  • Use almond butter
  • Roll in oats

Storage

Refrigerate in an airtight container for up to 3 weeks. Freeze for up to 3 months.
