Why you'll love this recipe
This beef and broccoli delivers all the flavour of your favourite takeaway with none of the guilt. Tender strips of beef paired with perfectly cooked broccoli in a rich, savoury sauce that you'll want to make again and again.
Ingredients
For the beef:
- 500g sirloin steak, sliced thinly against the grain
- 2 tablespoons cornflour
- 1 tablespoon vegetable oil
- Salt and pepper
For the sauce:
- 80ml low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 120ml beef stock
- 1 tablespoon cornflour mixed with 2 tablespoons water
For the vegetables:
- 400g broccoli florets
- 1 tablespoon sesame oil
Instructions
-
Prepare the beef: Toss the beef strips with cornflour, salt, and pepper until evenly coated.
-
Make the sauce: Whisk together the soy sauce, oyster sauce, honey, garlic, ginger, and beef stock in a small bowl.
-
Cook the beef: Heat vegetable oil in a large wok over high heat. Add beef in a single layer and cook for 2 minutes without stirring, then flip and cook another 2 minutes. Remove and set aside.
-
Cook the broccoli: Add sesame oil to the wok. Add broccoli and stir-fry for 3-4 minutes until bright green and crisp-tender.
-
Combine: Return beef to the wok. Pour over the sauce and cornflour slurry. Toss everything together and cook for 2 minutes until sauce thickens.
-
Serve: Serve immediately over steamed rice.
Tips for success
- Slice against the grain: This keeps the beef tender rather than chewy.
- Hot pan, cold oil: Start with a very hot pan before adding oil for the best sear.
- Don't overcook the broccoli: It should be bright green and have a bit of crunch.
Variations
- Chicken: Use chicken breast sliced into strips.
- Tofu: Extra-firm tofu works well for a vegetarian option.
- Mixed vegetables: Add snap peas, mushrooms, or water chestnuts.
