Why you'll love this recipe

This baked cod is proof that healthy eating doesn't have to be boring. The fish stays incredibly tender and flaky while picking up all the bright flavours of lemon, garlic, and fresh herbs. It's ready in 20 minutes and has just 180 calories.

Ingredients

For the fish:

  • 4 cod fillets (150g each)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper
  • Lemon slices for topping

Instructions

  1. Prep: Preheat oven to 200°C. Pat cod fillets dry and place in a baking dish.

  2. Season: Drizzle fish with olive oil and lemon juice. Scatter garlic and herbs over the top. Season with salt and pepper. Top each fillet with a lemon slice.

  3. Bake: Bake for 12-15 minutes until fish is opaque and flakes easily with a fork.

  4. Serve: Serve immediately with extra lemon wedges.

Tips for success

  • Don't overcook: Cod goes from perfect to dry quickly. Check at 12 minutes.
  • Room temperature fish: Let fish sit out for 10 minutes before cooking.
  • Even thickness: Fold thin tail pieces under for even cooking.

Variations

  • Cajun: Use Cajun seasoning instead of herbs.
  • Mediterranean: Top with olives, capers, and cherry tomatoes.
  • Asian: Use ginger, soy sauce, and sesame oil.

Storage

Best eaten fresh. Refrigerate leftovers for up to 2 days. Reheat gently to avoid drying out.
